In Aspen, it’s a smokehouse run by a former dentist puttin’ his own twist on ribs, and in Old Town Albuquerque, a funky fusion food truck-turned-brick-n-mortar spot heads off the charts with a flavorful veggie specialty and the bomb pork belly.
